The Carmel Room at the Rampart Casino at The Resort at Summerlin presents a Wine Maker's Dinner on Sept, 26 at 6:30 p.m. The evening will feature several selections from J. "We designed the pairing to highlight each vintage's flavor by coupling it with a course that accentuates the wine's unique qualities without being overbearing. I believe this fine dining event is enjoyable for both the most discerning wine connoisseur and the novice aficionado."
The menu includes:
Appetizers are Amuse Bouche — goat cheese and stuffed olive fritters; aioli and fried parsley with hearth breads and butter; and J. Lohr Sauvignon Blanc, Carol's Vineyard, Napa Valley 2006.
The first course includes: fresh Alaskan king crab terrine; sweet water shrimp and petite scallops; micro-mizuno greens served with Banyuls vinaigrette mustard, ginger and horseradish and tomato coulis; and J. Lohr Arroyo Vista Chardonnay, Arroyo Secco, Monterey 2005.
The second course offers braised veal cheek medallions; golden beets; Thumbelina carrots; braised celery; applewood-smoked bacon, brown butter spaetzle; green truffle oil; and J. Lohr Crosspoint Pinot Noir 2005.
Then there is the cranberry sorbet with frozen Kettle One Citroen Splash
Next is a third course that features seared-maple leaf duck breast; duck comfit; winter vegetable ragout with Israeli cous cous and candied orange; and J. Lohr Cuvee Pau, Paso Robles 2005.
For dessert there is Valrhona chocolate coverage baby poached pear; hazelnut tuile served with pumpkin ice cream and spiced chocolate sauce; and J. Lohr Late Harvest Riesling 2005.
